1. Introduction
It is commonly called as Yangdu Mo, Yangdu Cai and Bianli Jun. According to the fungus category, it belongs to Morchella Dill., Morchellaceae and Pezizaies. Morel consists of pregnant pileus and un-pregnant stem. There are net breaking-outs on the pileus surface and the edges of pileus connect with the stem. The stem is cylinder shape with hollow center and smooth or concave surface. It is the most famous edible mushroom in the ascomycete. The pileus contains 7 kinds of human essential amino acids, such as isoleucine, leucine, lysine, methionine, phenylalanine, threonine and amino-isovaleric acid. Morel is sweet, cold and nonpoisonous, and has the function of benefiting digestion organs, and reducing phlegm, regulating the flow of body.

Morel is with rich nutrition, according to the report, every 100-gram dried Morel contains 24. 5-gram protein. Therefore, it is considered as "the source of protein ", and called as "the meat in vegetable". In human body, protein consists of 20 kinds of amino acids while Morel contains 18 kinds. There 8 kinds of amino acids cannot be produced by human body, but they are extremely important, so it also gets the name as "essential amino acid". Moreover, it contains at least 8 kinds of vitamins, such as vitamin B 1, vitamin B 2, vitamin B 12, nicotinic acid, pantothenic acid, pyridoxine, biotin, folic acid, etc. The nutrition of Morel is equal to milk, meat and fish. Therefore, it is regarded as one of "healthy foods" internationally.

2. Classification
(1) According to Shape
Conic Morel (Conic Morelトガリアミガサタケ): Slight-brown conic pileus with sharp peak, concave rectangle channel on the surface, light color stripes arranging longitunally and divided by horizontal vein.

Yellow Morel (Yellow Morelアミガ サタケ): Spherical or oval pileus with obtuse peak, irregular or round concave; white, yellow or egg shell color when fresh, brown or black after dried.

Spring Morel Growth Season: From February to May
Characteristic: Sepia, thick flesh, crisp, tasty

Autumn Morel Growth Season: From August to December
Characteristic: White brown, thin flesh, not as tasty as Spring Morel and cheaper
